Caviar is a special and at the same time a sensitive product. Here are some tips and tricks with which you can get unique experience from sturgeon-caviar:
Storage:
The ideal storage temperature for fresh Baerial caviar lies between -2 and +2°C. If you do not have the facility to store in these temperatures, then caviar should be storaged in the fridge (+4 and +7°C) and consumed within a maximum 14 days. Fresh products normally canned in tins of different size. The AquaOrbis AG Baerial caviar is packed in vacuum tins with coated insides.
Usage:
Food:
Baerial caviar is arranged on an ice base. Classical accompaniments are sour cream and Blini (buckwheat Russian pancakes), as also buttered toast, baked potatoes or small potato fritters with Crème fraîche. Caviar accompaniments should on no account have a strong taste of their own, which could overpower the fine taste of the Baerial caviar.
Drinks:
Dry white wine or vodka are suitable drinks. Normally champagne or sparking wine is served.
Cutlery:
Special caviar cutlery made from mother-of-pearl, horn, tortoiseshell, wood or gold are ideal. Caviar should never come in contact with silver, because oxidised silver gives caviar a fishy taste. High-grade steel should also not be used.
